Capellini with Zucchini and Cherry Tomatoes
Ingredients
- 16 oz. Pasta Lensi Capellini
- 1/4 cup extra virgin olive oil
- 2 zucchini, sliced
- 1 med. white onion, chopped
- 1 clove garlic, sliced
- Salt and pepper to taste
- 20 cherry tomatoes, halved
- 1/2 cup chopped fresh parsley
- 8 fresh basil leaves, chopped
- 1/3 cup Parmesan cheese

Directions
Cook pasta according to directions. Drain.
Heat olive oil in a pan. Add zucchini, onion and garlic and sauté lightly. Add pasta, salt and pepper to the vegetables. Toss over moderate heat for 1 minute. Stir in tomatoes, parsley and basil.
Add Parmesan cheese and serve immediately. Mangiare bene.
